Chicken Tinga Tostadas

About the Recipe

Enjoy making an easy authentic Mexican recipe in less than 1 hour using simple clean ingredients.


2 large tomatoes 1 clove of garlic 1 large red onion cut in quarters 3.7 oz can Chipotles peppers in adobo sauce 2 tbsp cumin 1 cup shredded lettuce 1/2 cup thinly sliced red onions 1 bunch chopped cilantro 1 bunch of radishes thinly sliced 6-8 baked tostadas 1/4 cup table cream 1/4 queso fresco Salt and pepper to taste

1 pound of shredded chicken

1 cup refried black beans


Broil on high quartered red onions, garlic and tomatoes for 10 min. Or until they are browned. Remove and place in blender along with chipotles and blend on high until smooth.
Pour Sauce into med sauce pan and add chicken cooking for 15 min on medium to medium high. Remove from heat and let rest for 5-10 min.

Assemble tostadas applying a thin layer of black beens followed by the chicken, lettuce , onions, radish, cilantro. Top off with some table cream and queso fresco.
